It’s officially fall, which means we can finally incorporate apple and pumpkin into any and every recipe and it is socially acceptable! A truly special time of year, if we do say so ourselves.

Since we have apples and cider at the ready, we decided to give this Golden Delicious Risotto a try. The recipe calls for 1/2 cup of dry cider, so we opted for the Bin 18, which lent a nice but subtle kick to the Arborio rice. Side note - you’re in for about 20 minutes of stirring, so get your forearms ready.

Rootwood Report No. 3 - Adventures with Cider - Our next Rootwood Report is coming in from Karen! She joined our bottling & taproom rotation a few years ago and we are so glad to have her on board.

As a relatively recent transition to a Lake Chelan “full-timer,” Karen is learning a lot about the landscape of North Central Washington through constant exploring. Whether it be a paddle board session or a hike to the top of Chelan Butte, she’s doing it with a smile… and usually a few dogs… and some friends… and maybe even some cider…

She and her husband recently made Chicken Tikka Masala on their Green Egg barbecue and paired it with Pollinator Cider.

Rootwood Report No. 1 - Backyard chores & Bin Series Cider… taming weeds is never fun but it’s always nice to step back and recognize progress!
